Instant Mixed Vegetables Thoran Kit, a 400 g pack with 300 g carrot, beans and cabbage, 50 g grated coconut, and shallots, green chillies and curry leaves. It makes a colourful, everyday Kerala thoran with no shopping for three separate vegetables.

Heat oil in a kadai, splutter mustard seeds, add the chopped shallots and curry leaves, then the coconut for a minute. Add the vegetables with salt and a splash of water, cover and cook on a slow flame until just tender.

Refrigerate on arrival and cook the same day.
