Fresh Payar (beans) in a 250 g pack, ozone washed. Long, tender payar is a staple of the Kerala lunch plate, cut into small pieces for payar thoran or achinga payar mezhukkupuratti with shallots and dry chilli, or added to aviyal and sambar.
It pairs especially well with raw banana in the traditional kaya-payar mezhukkupuratti.
Store payar unwashed in a cover or box in the fridge and use within three to four days. Snap off the ends and cut just before cooking for the best texture.
