Pavakka (bitter gourd) in a 500 g pack, ozone washed. Pavakka has a strong, bitter taste that many Kerala households love, cooked into pavakka theeyal in a roasted coconut gravy, crispy pavakka fry, pavakka mezhukkupuratti, or a tangy pavakka pachadi with curd.
To reduce the bitterness, slice the gourd, rub with salt and turmeric, leave for 15 to 20 minutes, and squeeze out the water before cooking.
Store whole pavakka in the fridge in a paper bag or open box and use within four to five days.
