Padavalam (snake gourd) in a 500 g pack. Padavalanga is a mild, tender gourd that cooks quickly and takes on the flavours around it. It is a favourite for padavalanga thoran with coconut, padavalanga parippu curry with dal, kootu curry and moru curry.

To prepare, scrape the skin lightly, cut lengthwise, remove the seeds and soft core, and chop into small pieces or half-moons.

Store padavalam in the fridge, wrapped in paper or in a closed box, and use within three to four days.
