Cleaned Indian Mackerel Large (ayala), about 350 to 400 g, cleaned and cut to order. Ayala is one of the most popular fish in Kerala homes, with firm, flavourful flesh that suits both frying and curry.

Make ayala fry with a chilli, turmeric and pepper marinade, a red ayala curry with kudampuli or raw mango, ayala pollichathu in banana leaf, or a coconut-based ayala thengapal curry. Serve with rice or kappa.
