Fresh Garlic (veluthulli) in a 250 g pack. Garlic is a constant in Kerala cooking, from the ginger-garlic base of chicken curry, beef fry and biriyani to fish curry, rasam and mezhukkupuratti. It is also the main ingredient in veluthulli achar (garlic pickle) and a must in kappa puzhukku.

To peel quickly, crush each clove lightly with the flat of a knife, or soak the cloves in warm water for a few minutes.

Store whole garlic bulbs in a cool, dry, airy place, not in the fridge. They keep well for a few weeks.
