Chena (elephant foot yam), a 250 g piece. Chena is a hearty Kerala tuber used in erissery, kootu curry, aviyal, chena mezhukkupuratti, chena fry and the Onam favourite chena-kaya erissery.

Chena can make your hands itch, so rub a little oil on your hands or wear gloves while peeling and cutting. Boiling it with a little tamarind or kudampuli water first helps avoid an itchy throat.

Store the uncut piece in a cool, dry place. Once cut, wrap and refrigerate the remainder and use within two to three days.
