Vazhuthananga (violet brinjal) in a 250 g pack, ozone washed. Purple brinjal is soft and absorbs spices well, which makes it lovely in brinjal fry with chilli and turmeric, vazhuthananga theeyal, mezhukkupuratti, sambar and a spicy brinjal curry.

Cut just before cooking and drop the pieces into water so they do not darken. Check for any small holes in the skin as you cut.

Store brinjal in the vegetable drawer of the fridge, or in a cool place for a day, and use within three to four days.
